Ingredients:
Main Ingredients
- 1 kg Chicken thighs cut into pieces
- 2 tbsp Olive oil
- 1 Onion chopped
- 3 cloves Garlic minced
- 2 tsp Cumin
- 1 tsp Coriander
- 1 tsp Paprika
- 1 tsp Turmeric
- 400 g Canned tomatoes chopped
- 2 cups Chicken broth
- 2 Carrots sliced
- 1 Bell pepper chopped
- 1 cup Chickpeas cooked
- to taste Salt and pepper
- 1/4 cup Fresh cilantro chopped
Instructions:

Heat olive oil in a large pot over medium heat.

Add chopped onion and cook until translucent.

Add minced garlic and cook for another minute.

Add chicken pieces and cook until browned on all sides.

Stir in cumin, coriander, paprika, and turmeric.

Add chopped tomatoes, chicken broth, carrots, and bell pepper. Bring to a boil.

Reduce heat and let simmer for 30 minutes.

Add cooked chickpeas and simmer for another 10 minutes.

Season with salt and pepper to taste.

Garnish with fresh cilantro before serving.
